Honor is built up by the deeds you do giving your peasants multiple types of food to eat, building statues or hosting dances/jousting tournaments. As for attacking you have access to all kinds of fun siege stuff from catapults, trebuchets, siege towers, battering rams or even just digging under their wall to be sneaky or climbing their walls with ladders or hey just launch a dead cow over their walls with a catapult. You don't only have soldiers to defend or attack you'll also have fun things like moats, or pitch you can lay down and set fire to it when the enemy travel over it, lay spike pits or unleash caged wolves on them or just dump rocks and hot tar on them from the walls.
Build your armory and have your fletchers, weapon and armor smiths fill it up with goods, then once you have the gear use a barracks to recruit soldiers to defend your keep or attack the enemy. Once you get some basics up and get enough food you can give the peasants extra rations to make them happy, you then tax the hell out of them for gold.
Start with a lord and a basic keep, build your basic resource collectors like wood cutters, stone quarry and either hunters or farms for food. What is Stronghold? Well it's a real time castle building sim mixed with rts and economy/popularity management. I highly recommend the first game and Crusader, I really liked Legends and the new game is alright.
If you're never played any of these and even slightly interested I've put together a thread of all the games of the series and they are all currently on sale until January 30th. Some of these challenge maps are a lot harder then I remember them being and getting my butt caved in. I think we'll probably see something from it this year, and have been replaying a lot of the old games to prepare for it. Last year Firefly the devs of Stronghold announced they were bought by Devolver Digital, and they're also working on a new Stronghold game using UE5.
